First Week Menu

So, I'm sure by now you are all dying to know what I am preparing for the coming week. I dug through all of my recipe books, and I'm pretty happy with the menu I've created.  



Breakfast: Breakfast sausage sandwiches on an avocado bun 

Lunch: Veggie burgers with sweet potato fries

Supper: Baked chicken breast with garden garlic marinade and broccoli cranberry salad

Now, of course I'm anticipating getting a sweet tooth and needing snacks, so in addition, I will also make roasted chickpeas, popcorn, and a strawberry tart!

Breakfast:

I got this recipe from a Keto blog I was following for a while.  Unfortunately, Keto did not work for myself or my mom, so I can't follow a strict plan.  However, I did fall in love with many of the recipes and have re-made several since then.  I grabbed this recipe from the free 21 day plan over at My PCOS Kitchen.  I'm deviating slightly though from the original sausage recipe and choosing to use just ground chicken.  I prepared them as called for, however next time, I'm thinking about placing them in the smoker!



Lunch:

I know that I'm trying to avoid store bought and packaged food, however,  I have two veggie burgers left over in the freezer from Aldi, so I decided I'm going to use them up.  The rest of the week will be the homemade sweet potato burger recipe I found from a vegan magazine I bought at the Dollar Tree.  Surprisingly, there are quite a few good recipes in there, including "nice cream" which I am planning on making soon!

The buns will be homemade gluten free rolls.  I haven't quite decided yet if I want to make revolution rolls, or 90 second keto bread for the buns.  I discovered revolution rolls when I did a short round of Optavia to lose weight.  I lost, but unfortunately, the large amounts of soy and processed food made me very sick so I wasn't able to continue.  However, they have many clean and simple meals from their Lean and Green recipes, which I plan to still incorporate.  

Then for my side, I will be having sweet potato fries, homemade of course! My oven can also function as an air fryer, so I'm planning on using it to make them. 






Supper:

There is a company called Sucker Punch Gourmet Sauces in Western PA that makes homemade sauces, and he markets them to the local bars and fairs.  His sauces have simple ingredients and he's also aware of different food sensitivities.  I buy a jar of his garden garlic sauce every year at one of the vendor shows.  It's a different BBQ, with a peppery tang, but I enjoy it for a shake up!  I will be marinating my chicken breast in the sauce and then baking it in the oven.

Love and Lemons is one of my favorite clean eating blogs. My co-worker introduced me to them in 2019 and I have been a fan ever since!  Their recipe called "Best Broccoli Salad" truly is the best!  I made it the first time for my priest's birthday party.  I doubled the recipe, and I brought hardly any home!  However, it calls for craisins.  Since I am cutting out refined sugar, it's been impossible for me to find any in the store, so I made my own last night.  They weren't perfect, because I got impatient, but they will do for my first attempt! Luckily I still had the bags of cranberries left over from Christmas to make them!

The broccoli salad turned out amazing, as usual.




Snacks:

Let's face it; I'm planning on cutting back on snacking, but there's no way I can completely cut out snacks, especially the first few weeks.  But incorporating healthy snacks in moderation is MUCH better than what I've been doing.  

A simple Google search for roasted chickpeas will give you a fantastic alternative to potato chips.  They are loaded with protein, and are crunchy and salty, making them a great option!

For a second snack, I'm taking some black olives.  I have a strange love affair with olives, and I crave them often!  Having some as a snack later in the day is always a nice pick-me-up.

Dessert:

Yes, in moderation, dessert is still possible! I stumbled across a blog called Bakerita, and I've been a huge fan of hers! She focuses on gluten free, dairy free, and refined sugar free baking.  I bought her cookbook this summer, and I'm planning on enjoying her recipe for Strawberry tart!
