Meal Prepping #3

I slipped up Sunday and Monday by eating out, and eating too much.  And unfortunately, the food I over ate was not even on plan.  

But I'm not letting that stop me!

I ended up freezing the pasta I was not able to eat, so I'll have some easy sides for my lunches if I need to.  

Then, I worked on my new menu! 

I loved the homemade breakfast sausage so much, I decided to make more! Only this time, it was a crumble sausage made from turkey meat.


Breakfast: Homemade breakfast sausage in a one egg omelet

Lunch: Sweet potato vegan burgers with a side of hummus

Supper: Grilled corn salad with vegan chipotle ranch


Breakfast:

I took my pound of ground turkey (thanks to a manager's special sale!) and added the same spices from last time and browned it on the stove to make a sausage crumble.  I have been adding this to a one egg omelet every morning.  In addition, I am also chopping a few pieces of tomato and bell pepper into the egg as well.  It has been a very tasty and filling breakfast!

Lunch:

I found a magazine at the Dollar Tree with plant based meals a while back and  decided to buy it.  It's just a thin magazine, presented by the writers at Delish.  This is the first time I've actually made anything from it.  I tried my hand at homemade vegan Hawaiian burgers.

Now, I'm not a vegan, however, I am trying to eat a little more plant-forward with my new life style.  Not for one second am I fooled into thinking this is a real burger.  HOWEVER, I will say that the sweet potato patty has a nice crisp outside and an interesting texture inside thanks to the oats and sunflower seeds.  When placed on my keto bun, it's actually pretty enjoyable.  The recipe called for only lettuce and a slice of caramelized pineapple on the patty and I've surprisingly enjoyed it!

Again, not trying to make the entire meal vegan, however, I ended up serving my "burger" with a side of hummus which I'm dipping slices of bell peppers in. I also have a side of a few black olives, because I just love olives!


Supper:

There's a blog site called Minimalist Baker that I've been following for quite some time.  I finally found a recipe that I just had to try! It's a grilled corn salad, but instead of sweet potatoes, I have been using up the left over chicken from last week.  

For the grilled corn, I simply used two cans of corn, rinsed them under water, and placed in a skillet on medium low heat.  Oh did it smell so sweet and yummy! It really brought out the sugary sweetness in the corn, and it's delicious on this tangy salad!

I've never made my own ranch before, but I was pretty impressed with how it turned out. This is the ranch in the salad recipe that they reference. It turned out a little too thick, so I'll have to remember to thin it down for next time.  But the flavor is dynamite!

I used the last of my herb chicken on the salad, and then I also made a new type of chicken last night to put on it going forward:
crispy cilantro lime chicken. I found this on another blog I love called What Molly Made.  I first discovered her when I was following keto last year.  I thought this chicken would be a great compliment on my grilled corn salad!

Snacks:

I've only been snacking on one bag of 100 calorie Skinny Pop each day at work.  My cravings are considerably less, and having the hummus and veggies to munch on at lunch has really made a difference in decreasing my need to snack.

Dessert:

I made my strawberry tart the other day, and I still have a few servings left. I ate it warm from the oven that first night, and it was fantastic! However, lately, I've been eating it straight from the fridge.  Between the texture and flavors, when served cold, it almost tastes like a strawberry pretzel salad! I definitely give this recipe a 10/10 PERFECT!
