Welcome back!
Today is the first day that I can say I stayed 100% completely on plan! Last week was difficult, beginning to cut back. Most of my meals were healthy, except for Sunday and Monday. But I struggled with snacking on "bad" things in between meals. Today though, I got right back on track and I'm so proud of myself for not quitting.
It's so difficult to not be hard on yourself when things don't go as planned; especially when it comes to your diet and lifestyle. But it's important to remember that one slip up today doesn't mean you're a bad person. And it doesn't mean that tomorrow won't be better. Tomorrow WILL be better, as long as you learn from today.
And in that spirit, to make tomorrow better than today, I realized I needed a dessert alternative. Eating so many savory items means that I crave dessert all the more. So tonight, I made a strawberry tart!
Now, I'm sure you're thinking, "Wait! Dessert isn't on plan!" But, guess what! It actually is!
A couple years ago, at the start of my dairy free journey, I came across a blog called Bakerita. She has wonderful recipes, mainly desserts, and focuses on items that are gluten free, dairy free, and refined sugar free! And luckily for me, I happened to find her cookbook this summer!
Can I just say, that the strawberry tart is so freaking delicious, and definitely hits that sweet tooth, in the healthiest way possible! It was pretty easy and simple too, something I always appreciate in a recipe!
Now, I'm not saying to eat nothing but strawberry tart, and eat half the pan. But, in moderation, a small scoop or slice is a great way to learn self control and practice healthy habits for long term health and weight loss. And if I do happen to over-indulge, at least the ingredients were all on plan.
Well, tomorrow I will be cooking again, as my mid-week meal prep ran out and the left-overs were frozen for easy meals on another day. I'm working on the menu currently, and I hope to have it posted here later this week!
