The Struggle is Real

Sometimes, no matter how prepared you think you are, you are still struck by surprise.

My sweet bunny Willie passed from his life with me.

Caring for him that last month really took a toll on me.  He had to be syringe fed and watered most of the time.  I held him to keep him warm.  I massaged him to keep him going to the bathroom.  It was just too much for him, and God decided he needed Willie more.

Taking so much time every day and caring for him also meant that I stopped cooking for myself. My last week with him, I made a big pot of dairy free mac and cheese from a box and hot dogs in the air fryer.  Needless to say, I gained a few of my pounds back, and stalled all of my progress.

I don't regret a single minute I spent with him his last month and a half with me.  But, caring for yourself is important too.  

So, with the beginning of Lent, I'm recommitting to my health journey.  

I've decided to cut alcohol out from my diet, as well as double my weight loss.  I had lost 15 pounds, prior to gaining back three of them.  So, I figured that in another 40 days from now until Easter, I should be able to easily lose another 15, and keep myself moving forward.

My first meal I prepared this week is from Hungry Girl.  I found her cook book at my local discount store, and the couple recipes I've made from it are so easy and quick, just like the title!  My latest creation was her Honey Lime Shrimp.  It was so easy and tasted incredible re-heated the next day for lunch! The best part is that each portion is under 300 calories!

Also, while I was busy taking care of my Willie, I stopped blogging.  Until the last few weeks when I stopped cooking, I was still taking pictures of my creations.  So, for your viewing pleasure, here are a few that you missed out on!

A recreation of my breakfast egg cups from when I did WeightWatchers.  Except, there is zero dairy in these! Only eggs, spices, and veggies!

 
Another breakfast creation from Meals that Heal.  This was probably my favorite, and was incredibly filling!

 
My vegan meal I came up with for lunch! Homemade hummus from Love and Lemons.  I added parsley and smoked paprika, along with gluten free flax crackers and gluten free pretzels from Aldi!  I may never buy hummus again; homemade was way too good.
