On Track for the Holidays




Hey Everyone!

I know, it has been quite a while. The last few months of summer turned into very interesting ones for me.  Not only was I sick in July, but I was sick again in September, and then October with tonsillitis. On top of that, I had, and still have to an extent, horrible fatigue and aches.  Which in turn, meant it was harder and harder to cook healthy for myself, or even feel like cooking at all, which only fueled the fire.  

Thanks to my wonderful new doctors, I am now feeling better, and I'm hoping to continue to stay healthy until I can have my tonsil surgery.  So I am taking advantage of the momentum and getting back to my anti-inflammatory lifestyle.

This time of year is particularly a favorite for me when it comes to healthy living. Summer picnics and events are over, and it's getting cold outside. In my mind, there is no better time than now to reprioritize your health!

Now, I know many of you are thinking "But the holidays are coming! What's the point!?" I prefer to get ahead of the Battle of the Bulge during these last few months, so that hopefully, I will net zero in weight loss/gain by New Year's Day. Not to mention, that by eating cleaner and for your body, you will feel better and *hopefully* be healthier with more energy to get you through these crazy last few months. 

I've picked out some wonderful recipes to get myself started this week, and I'm so excited to share them with you!

Breakfast is a constant struggle for me. I am always running late in the morning, so taking the time to make even a smoothie is too much for me usually.  I follow Cailee Eats on social media, and she shared this awesome recipe for breakfast sandwiches. You can prep them ahead of time, and then, just re-heat! I made my first batch last night, and it was so delicious this morning! I also made my own sausage patties from another blog I follow called My PCOS Kitchen. I would have much rather used some Bob Evans or Jimmy Dean sausage, however, once I scanned the labels with my Yuka app, I saw just how dangerous the additives were, so I opted to make my own using fresh ground pork. I've made this a few times now, and it is a tasty alternative that has the necessary spices to give it that breakfast taste!

We celebrated my dad's birthday the other day, and for the meal, we ordered a pan of baked chicken. There is no gluten or dairy in it, which means I have delicious chicken to incorporate into my meals all week! Yesterday, I had a chicken salad that I threw together to resemble my favorite salad from Minimalist Baker. It wasn't as good as if I had taken the time with it like I usually do, however in a pinch, it was delicious!

One of my other favorite things about this time of year is the pumpkin carving, because pumpkin carving means pumpkin seeds, and pumpkin seeds means I'll have a delicious and healthy snack available! Not only are pumpkin seeds a great source of protein and fiber, but they are also loaded with nutrients! I just love snacking on home roasted seeds!

The rest of the recipes for this week, I have not quite determined. However, I am so excited to be back on track and feeling better again!
