I under-estimated a few portion sizes from my meal prepping on Sunday, which means I did not have enough food the last few days of the week.
So last night, I dug out my two favorite recipes: alfredo sauce and lemon artichoke pasta! Coincidentally, they are both from the Love and Lemons blog!
I made whole grain penne from Barilla and using Love and Lemon's recipe for Vegan Alfredo Sauce, I was able to create a delicious dinner for myself! Yum! Since becoming dairy free over two years ago (not by choice, sadly), I have to admit that it's alfredo I miss the most; not cheesecake, nacho cheese, or even fried mozzarella sticks! The dairy free alfredo in jars that I have tried from the stores just don't taste the same as traditional alfredo. This homemade recipe from Love and Lemons is the closest I've had since the real deal. It's so simple to make too!
Tonight I plan on making copycat Texas Roadhouse Herb Crusted Chicken from Eating on a Dime. I thought that this would be a beautiful compliment to the alfredo sauce, as chicken alfredo is one of my favorite dishes in the world. And at the same time, it's still healthy! Whole grain pasta, clean sauce made from simple ingredients, and chicken breast with olive oil and herbs.
Next, I decided to make my favorite pasta dish, also from Love and Lemons: lemon artichoke pasta! The individual steps of preparing the sauce, artichokes, and lemons truly sets this dish apart from the rest, and it tastes like restaurant quality from my own kitchen! I've made this dish multiple times, and it never fails to disappoint. I just used the jarred artichokes, usually from Aldi, although this time, I bought a huge jar at Sam's Club and used them. I then roast them at 375 degrees F until the begin to brown, after tossing with oil salt, lemons, and lemon juice. I use Barilla whole grain spaghetti and pour the sauce and artichokes overtop.
